  Owen Griffith Jones is a After obtaining a bachelors degree in food science from the Ohio State University and a doctorate in food science from the University of Massachusetts Amherst, I spent two years in Switzerland as a post-doctoral researcher. My work in the physical interactions and structuring of food proteins led me to my current position as a Professor of Food Science at Purdue University. In 2011, I also joined the Whistler Center for Carbohydrate Research. The goal of my research program is to identify structural features of polysaccharide, proteins, and lipids that contribute towards changes in their interactions, particularly in dilute-to-semi-concentrated aqueous mixtures that are highly relevant to food products. A major branch of this research has involved structures comprised of common bio-polymers that are assembled via associative interactions and physical interventions. Investigated applications of such assemblies have included encapsulation systems, textural modifiers, emulsion stabilizers, and structural agents within composite materials. My group is also very interested in the role of specific interactions between food biopolymers in the texture and stability of complex food & beverage mixtures, as well as the unique attributes of protein and polysaccharide isolates from non-traditional sources.
