Average of 153 appointments per semester. • Taught ServSafe sanitation training and certification courses. Average of six courses taught annually, class were two days in duration. • Presented on various nutrition & wellness topics to both internal and external audiences • Conducted internal foodservice sanitation audits annually at over 25 accounts • Developed and oversaw corporate food safety and sanitation standards in compliance with the FDA 2013 Food Code • Provided RD coverage at our long term care and senior living accounts; I am trained to work in compliance with the Minimum Data Set (MDS). I created and conducted an assessment in Spanish at nine primary schools along the Arajuno Road. The assessment collected data on food security within each community, gathering the following information: what food programs were in place at each school, what degree of reliance each school had on government subsidies, what the typical nutrient profile was of meals provided to students, and identifying how the community garden products were utilized. After gathering and analyzing this data, I collaborated with organization directors to develop nutrition action plans for each school. I also conducted “charlas,” interactive nutrition talks, with the indigenous Kichwa community of Chuya Yaku. I worked side by side with community members for two- three days weekly in the organic community gardens. Read more about my experience here: http://www.sentinel-standard.com/article/20141007/NEWS/141009228. • Taught English to business professionals throughout Buenos Aires; student clientele was comprised of lawyers, bank executives, and TV producers • Created lesson plans and conducted engaging classes for all English language levels. • Improved inter-cultural communication skills as I learned about the economy, political environment, and lifestyle of Argentinians during classes. • Provided Medical Nutrition Therapy to clients living with HIV/AIDS, cancer and other life challenging illnesses • Managed Quality Assurance of organization by performing weekly kitchen audits, conducting food temperature studies and responding to client complaints and concerns • Conducted grocery store tours and assisted with cooking classes, and cooking demos • Worked on collaborative team of Chefs and RDs to create and analyze a 6-week cycle menu with 11 different meal plans designed specifically for various disease states • Developed and provided nutrition presentations to various community and professional groups in Washington DC, Maryland and Virginia. • Completed more than 1,500 hours of supervised practice at a major academic medical center, exceeding all expectations. Supervised practice consisted of rotations in three main domains: clinical nutrition, community nutrition and foodservice management. Successful completion of internship made me eligible to sit for the registered dietitian exam to become a RD. • Provided nutrition intervention to various inpatient populations including: GI Medicine, Nephrology, Oncology, Otolaryngology, Bone Marrow Transplant, Cardiology, Thoracic Surgery, Pediatric Cardio-Thoracic Unit and various pediatric services • Served as entry level dietitian in the pediatric ICU for three week; familiarizing myself with the nutrient needs of this vulnerable population; oversaw recommendations for enteral and parenteral nutrition for patients • Elected by peers to lead research project during foodservice rotation to evaluate feasibility of transitioning 800 bed facility from a food delivery system of cook-chill to room-service, collected over 450 points of data, analyzed results, and presented findings • Integral member of the health care team, enhanced communication skills and participated in interdisciplinary team rounds through five ICU rotations. • Coordinated a mentoring program that matched college students with local at-risk elementary students. The goal of the program was to increase positive attitudes towards education and nutrition. • Recruited, interviewed, selected, and trained qualified mentors • Increased program activity by 48% and added two schools as community partners. • Participated in one-on-one and group nutrition counseling sessions. One-on-one sessions conducted primarily with children with disordered eating.
