Jesse Beasley Email & Phone Number | I am a Research Fellow in The University of Melbourne Faculty of Science who is passionate about addressing global human iron and zinc deficiencies by enriching staple food crops (e.g., wheat, rice, and soy) with essential metal micronutrients, a process commonly referred to as “biofortification”. My Ph.D. determined the impact of a genetically modified (GM) biofortification strategy on bread wheat growth, grain nutrition, and food processing. From this research I published a series of first-authored articles that challenge the more traditional biofortification approaches of increasing micronutrient ‘quantity’ without regard to micronutrient ‘quality’ (i.e., localisation and bioavailability). I am interested in conducting impactful STEM research that contributes to global food security and am currently employed as a full-time Research Fellow on an ARC Linkage project entitled ‘Advanced Plant Breeding and Food Manufacturing for Healthier Bread’ (LP190100631; 2020 – 2025) that is led by Assoc Prof Alex Johnson at The University of Melbourne.
